This Hidden Veg Pasta Pesto is so easy to make and ready in 20 minutes. Fry the cherry tomatoes, spiralise the courgettes, blend your broccoli and pesto to make a super tasty spaghetti sauce!

Ingredients

  • 250 g wholemeal spaghetti (£0.30)
  • 3 courgettes (£1.15)
  • 250 g cherry tomatoes (£0.55)
  • 1 jar of pesto (£0.99)
  • 1 pack of tenderstem broccoli (£1.15)
  • 2 cloves of garlic (£0.06)

Cupboard Essentials

  • 1 tbsp olive oil
  • Salt

Method

  • Add the spaghetti and broccoli to a medium saucepan with boiling water.
  • Meanwhile, add the cherry tomatoes to a frying pan with a tbsp of olive oil and gently fry.
  • During this time, spiralise your courgettes.
  • Add the courgette and minced garlic to the frying pan and cover with a lid on a low heat.
  • Once the broccoli has been boiled for 8 minutes, remove from the sauce pan and add to the blender with the jar of pesto. Fill up the jar of pesto with water and shake, adding this to the blender as well.
  • The spaghetti should be ready after 10 minutes and the courgettie should be soft. Mix your spaghetti with the courgettie and pour in your broccoli pesto! Add salt to taste.

This is a great way to add nutrients and flavour to your standard jar of pesto. I love it as it upgrades it to a fresh pesto which is the best but soo pricey. The courgettie also increases the portion size while keeping the carbs relatively low so if your tracking macros and you’re looking for a low-carb meal this is a great alternative. (Carbs are not bad, pls do not cut out carbs)!
