Ingredients

  • 500 g pork mince (5% fat (£1.99)
  • 200 g ready to wok noodles (£0.54)
  • 500 g carrots (£0.29)
  • 1 bunch of coriander (£0.29)
  • 100 g spring onion (£0.29)
  • 3 cloves of garlic (£0.09)
  • 75 g ginger (£0.49)

Cupboard Essentials

  • 4 tbsp soy sauce
  • 1 tsp chilli flakes
  • 2 tbsp olive oil

Method

Tag a friend you’d like to meal prep these beauties with. They’re low-cal, high protein (36g) and sooo tasty.

  • Start by shredding the carrots. This takes a lil while but is completely worth it.
  • Chop the garlic, ginger and spring onions. Separate the onions as shown in the video, the lighter end of the onion will be for frying and the darker end for garnish.
  • Drizzle two tbsp of olive oil to a large frying pan/ wok on a medium heat. Add the ginger and chilli flakes to the oil along with the spring onions to infuse into the oil.
  • Add the pork mince and brown for around 7 minutes with a tbsp of soy sauce.
  • After this has browned nicely, pour the pork mince into a bowl and add the carrots and noodles into the pan with a splash of water. Cover with a lid and leave to simmer for 5-6 minutes. Don’t try and break the noodles apart when they’re cold!
  • Once the carrots and noodles have softened, remove any of the excess water from the pan. Add in your pork mix and stir in another 3 tbsp of soy sauce.
  • Sprinkle some of the remaining spring onion and coriander and you’re good to go!
