Try these beautiful Vegetarian Gyros. Make the elements ahead of time and combine within 30 seconds on the day. Great meal prep, low calorie and still so satisfying!

Ingredients

  • 2 tins of chickpeas (£0.66)
  • 6 wholemeal pittas (£0.42)
  • 1 lime (£0.23)
  • 2 small red onions (£0.11)
  • 1 cucumber (£0.54)
  • Bunch of fresh mint (£0.54)
  • 400 ml greek yogurt (£0.56)
  • 1 chopped iceberg lettuce (£0.53)

Cupboard Essentials

  • 1 tbsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp oregano
  • 2 tbsp olive oil
  • Salt & Pepper

Method

Tag a flat mate/ partner to meal prep these beautiful veggie gyros. Make the elements ahead of time and combine within 30 seconds on the day you wanna eat them! Sounds like a winner to me.

    Preheat oven to 200°C

    • Rinse and drain your chickpeas, adding them to a baking tray. Drizzle some olive oil over them (approx 2 tbsp) and coat with the smokin’ chickpea seasoning.
    • Pop in the oven for 20 minutes. Meanwhile grate the cucumber to mix with the greek yogurt to make the tsatziki. Squeeze the juice of the whole lime and season with salt and pepper.
    • Roughly chop the mint and add half to the tsatziki, leaving the remainder to sprinkle at the end.
    • Shred the red onion/ finely slice ready to add to the gyros.
    • Toast your pittas for around 3 minutes and slice lengthways avoiding the wild steam.
    • When your chickpeas are ready, combine all of the tasty elements and sprinkle on the remaining mint.
