Start your day with this nutritious and filling Breakfast burrito. Scrambled eggs, peppers and spinach make a great combo. Roll the wholemeal wrap to make your breakfast beauty!

Ingredients

  • 12 eggs (£1.75)
  • 6 wholemeal wraps (£0.79)
  • 3 mixed peppers (£0.91)
  • 200 g spinach (£0.85)
  • 50 g spring onions (£0.54)

Cupboard Essentials

  • 1 tbsp olive oil
  • Salt & Pepper

Method

  • Start by chopping the peppers and spring onion. Set aside the chopped green end of the spring onion for garnish.
  • Add 1tbsp of olive oil into a large pan and gently fry the peppers and spring onion (white end) one a medium heat for 6 minutes.
  • Meanwhile, whisk the eggs and season with salt and pepper. If you want to add cheese you can do that at this stage.
  • Pour the eggs into a large saucepan on a medium heat, stirring occasionally to scramble the eggs.
  • Finally, add a handful of spinach, followed by the scrambled egg, peppers and onion onto the wholemeal wrap. Sprinkle on some fresh spring onion and then roll the beauty into a burrito.
  • Wrap each burrito in foil and put half in the fridge and half in the freezer. Pop in the mic for 30 seconds on the day of eating.

You can add a sauce of your choice (mayo, ketchup, sriracha etc) or have it plain
