A twist on the classic British dish, try these Veggie Sausages with Cauliflower mash. This version is lower in calories and lighter, yet comforting and tasty!

Ingredients

  • 8 veggie sausages (£1.59)
  • 2 cauliflower heads (£1.84)
  • 400 g petit pois (£0.89)
  • Bunch of fresh thyme (£0.50)
  • 2 cloves of garlic

Cupboard Essentials

  • Bisto gravy
  • 2 tbsp olive oil
  • Salt

Method

* This quantity of peas is not good for the pea haters so feel free to swap it for some baked kale, asparagus or another form of greens.

    Preheat the oven to 200°C

    • Start by placing your veggie sausages onto a baking tray and cook in oven for the allocated time instructed on la packet.
    • Meanwhile, de-stem your cauliflower and cut into even sized florets. Wash in a colander and add to a large pan to steam for 8 minutes.
    • Whilst the cauli is steaming, remove the sprigs of thyme from around 6 stems and finely chop, along with the garlic.
    • Add 2 tbsp of olive oil to a frying pan on a low heat and gently fry the thyme & garlic for about 3 minutes. Do not burn the garlic!
    • Once the cauliflower is steamed, blend with a hand blender and stir in the oil mix. Season with a generous pinch of salt.
    • Boil the peas for the stated time on the packet & remove the sausages from the oven.
    • Divide the peas, mash and sausages into your meal prep containers and add optional gravy if you have some in the cupboard! Delishh
