Try this delicious Creamy Prawn Ramen. It's light, warming and perfectly filling at the same time. So easy to put together in one pan and ready in just 15 minutes!

Ingredients

  • ½ jar red curry paste (£0.39)
  • 1 tin of coconut milk (£0.75)
  • 180 g fresh cooked prawns (£1.75)
  • 1 pack of straight to wok noodles (£0.59)
  • 1 bunch of spring onions (£0.54)
  • 1 lime (£0.23)
  • 200 g spring greens (£0.61)

Cupboard Essentials

  • 750 ml fish stock
  • 1 tbsp coconut oil/olive oil

Method

  • Add the cooked prawns to a large saucepan/wok with a tbsp of coconut oil (or olive) and the red curry paste.
  • Meanwhile, use your hands to tear apart the spring greens and add straight into the pan, leaving the stalks out.
  • Chop your spring onions and add them to the pan as well. Stir well and cover with a lid.
  • While the greens start to wilt, boil the kettle and measure out the fish stock.
  • Pour in the stock and coconut milk and stir. Add in the noodles and simmer for around 2 minutes before trying to break the noodles apart. At this point they will naturally loosen and your dish is ready to eat! Its light but perfectly filling at the same time.
