This colourful Rainbow Turkey Stir-Fry recipe is super simple to make, low in calories, high in protein and packed full of flavor. The most delicious lunch or meal prep!
Ingredients
375g(3/4) turkey steaks (£2.59)
3courgettes(£0.90)
1bag of carrots(£0.34)
1pack of ready to wok noodles(£0.59)
Fresh ginger(£0.45)
Cupboard Essentials
200mlchicken stock
2tspgaram masala
1tbspof coconut oil
1tbspsoy sauce
Method
Using a spiralizer or serrated peeler, spiralise the carrots and courgettes and set aside. Slice your turkey into thin/long pieces and add to pan with 1 tbsp of coconut oil.
While the turkey is frying gently, boil the kettle and measure out 200ml of chicken stock. Place the ginger in the stock to infuse.
After around 5 minutes the turkey should whiten, add in 1 tbsp of soy sauce and the garam masala. Also mix in the carrots and stock at this stage.
Add in the ready to wok noodles, once they have loosened with the heat, stir them into carrots and turkey.
Once the stock has reduced to a sauce like consistency, add in your courgettie and stir. I didn’t cook the courgettie for too long as I wanted it to have more volume, but if you want the courgettie to be soft, cover with a lid and cook for 5 minutes.
Perfect lower carb substitute if you’re trying to reduce your calorie intake while still having big portions. I personally have to have big portions otherwise the fun is over too quickly 😏😏😏
