Start finely dicing one of the onions and mincing the garlic.
In a mixing bowl, combine the mince, diced onion, minced garlic, one tbsp of parmesan and egg. Season with 1tsp of dried thyme and salt.
Using your hands, shape the mix into balls and lay out on a greased baking tray. Pop in the oven with a timer set to 15 minutes.
Meanwhile, saute the rest of the onion (sliced) and garlic in a saucepan for around 5 minutes with a tbsp olive oil. Season with 1 tsp of oregano.
After this add the plum tomatoes and 1 tin of water to the saucepan. Reduce to simmer.
Pop the spaghetti on and set the timer according to the packet.
While everything is cooking, spiralize the courgettie so it is ready to blanch in the pasta water for the final minute of cooking.
The meatballs should be ready at this stage so you can pour them into the marinara sauce and serve up with the spaghetti/courgetti mix when its ready.
