- 4 eggs (£0.90)
- 2 leeks (£0.95)
- 100g kale (£0.50)
- 1 onion (£0.49)
- 50g feta (£0.95)
- 1 tbsp olive oil
Preheat the oven/ grill to 180°C
1. Start by cutting lengthways into the leek and rinsing under a tap. Then roughly chop and add to a large frying pan with a tbsp of olive oil on a medium heat.
2. Meanwhile, roughly slice your onion and add into the pan. Fry for around 6 minutes, until the leeks are soft and the onion is translucent.
3. At this stage, season with salt and add the kale. Fry for around 2 minutes until it starts to reduce and soften.
4. Make 4 little holes and crack the eggs into them. Sprinkle on some red pepper flakes for a lil heat and some feta. Pop under the grill for 6-8 minutes and enjoy! (I got distracted and overcooked mine a little).
