Try this moist and delicious Breakfast Banana Bread that contains no sugar or butter! So easy to make and perfect for breakfast or an afternoon snack.

Ingredients

  • 6 ripe bananas, mashed (£0.78)
  • 250 g self raising flour (£0.45)
  • 1 handful of trail mix (£1.00)
  • 150 ml yogurt (£0.69)
  • 2 eggs (£0.75)

Cupboard Essentials

  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • A drizzle of honey

Method

Start by preheating your oven to 180°C.

  • Grease your loaf tin with coconut oil and line with parchment paper
  • Combine in a mixing bowl your dry ingredients (flour, baking soda & cinnamon)
  • In a separate bowl, mash your ripe bananas with a fork and whisk in the eggs, yogurt and vanilla extract. While mixing, fold your dry ingredients into your wet and finally stir in the trail mix.
  • Once combined, pour into your loaf tin and pop in the oven for 1 hour or until the skewer comes out clean.

Slice up, so it’s ready to eat at breakfast time. You can serve with a dollop of yogurt and a squeeze of honey.
