Ingredients

  • 500g turkey left overs/turkey steaks
  • 2 romaine lettuces, washed and torn (£1.00)
  • 2 carrots, grated (£0.29)
  • Cucumber, sliced into ribbons (£0.44)
  • 1 tin of sweetcorn (£0.35)
  • Bunch of fresh coriander (£0.50)
  • 1 tbsp sriracha (£1.00)

Cupboard Essentials

  • 2 tbsp mayonnaise
  • 1 tsp rice wine vinegar
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • Salt & Pepper

Method

1. Add the cucumber ribbons to a bowl with the soy sauce and a pinch of salt to pickle/ absorb the flavours whilst preparing the rest of the salad.

2. Combine the rice wine vinegar, sriracha & mayo in a small bowl. Once combined, slowly add the olive oil whilst stirring continuously. If you want a looser dressing, add a couple of tbsp of water.

3. Plate up the salad by adding the washed/ torn lettuce, grated carrot, sweetcorn and soy sauce cucumber. Top with the leftover turkey and drizzle with the sriracha mayo dressing. Garnish with fresh coriander & a pinch of red pepper flakes.
