Method

The cost per portion is reflective of buying the ingredients to make this 4 times (12 eggs, 1 can of black beans) etc.

1. Start by draining the black beans and adding them to a mixing bowl. Add the cumin & a pinch of salt. Stir so that the beans are evenly seasoned.

2. Whisk your eggs and season with the “all-season” and chilli powder. The all-season has salt in it so no need to add a pinch of salt here.

3. Pour your eggs into a non-stick frying pan on a low heat and continuously stir until your eggs are cooked to the consistency that you like. Cooking on a low heat prevents the scramble from having contrasting dry egg bits, with wet/raw egg bits as it cooks more evenly.

4. Plate up the eggs with 1 tbsp of the cumin black beans. Add some of the fresh tomato on top (you can dice it or slice it, whatever you fancy) and garnish with some fresh coriander.
