Roasted pepper tortilla pizza, super easy to make and lower in calories than your standard pizza. So tasty with the saucy tomato, roasted peppers, melted mozarella and a sprinkle of rocket.

Ingredients

  • 1 bag rocket (£0.50)
  • 6 large wholemeal seeded wraps (£0.79)
  • 3 balls mozzarella (£0.46x3)=(£1.38)
  • 3 mixed peppers (£1.15)
  • 1 jar of tomato and garlic pasta sauce (£0.49)

Cupboard Essentials

  • 4 tbsp olive oil
  • Chilli flakes
  • Oregano to sprinkle
  • Red pepper flakes
  • Salt & pepper

Method

Preheat oven to 180°C

  • Start by slicing the peppers into strips and then popping them in a baking tray, coating them with a tbsp of olive oil. Place in oven to roast for 20 minutes.
  • Add ½ tbsp olive oil to the circumference (#maths) of each wrap to prevent the edges from burning that aren’t coated in sauce. Add around 3 tbsp of tomato sauce to wrap base, spreading evenly with a spoon.
  • Use your hands to tear the mozzarella (½ a ball per pizza) and place the roasted peppers on once the 20 minutes timer has gone off. Sprinkle some dried oregano on top, optional red pepper flakes and a pinch of salt.
  • Place in oven for 10 minutes, keep an eye on them as they can burn quickly if left for too long!
  • Garnish with rocket and you’re ready to eat! So tasty, low calorie and super satisfying.
