This is a reduced fat variation to your standard sausage pasta, with spicy tomato sauce and lots of chopped broccoli. Serve with some grated parmesan and enjoy!

Ingredients

  • 454 g turkey sausages (£2.39)
  • 1 onion (£0.70/3)=(£0.23)
  • 1 head of broccoli, chopped (£0.58)
  • 3 cloves of garlic (£0.62/3)=(£0.21)
  • 40 g Gran Padano (£1.75/2)=(£0.88)
  • 400 g fusilli or penne (£0.53)
  • 2 tins of chopped tomatoes (£0.28x2)=(£0.56)

Cupboard Essentials

  • ½ tbsp chilli flakes
  • 1 tsp oregano
  • 1 tsp dried parsley
  • 1 tbsp olive oil
  • 400 ml chicken stock
  • 2 tbsp tomato puree (£0.31)
  • Salt & Pepper

Method

  • Start by adding the turkey sausages to a large frying pan with a tbsp of olive oil on a high heat. Use your fork to break the sausage apart & leave to brown for 5 minutes.
  • After this time, remove the sausage from the pan and set aside. Add the diced onion and the finely chopped broccoli to the pan. Season with a pinch of salt and fry until the onions are translucent.
  • Before adding the liquids, gently fry the tomato puree, oregano, dried parsley, chilli flakes and garlic for around 2 minutes. Then pour the chopped tomatoes, sausage and chicken stock into the pan. Stir to combine and reduce to a simmer. Timer set to 20 minutes.
  • During this period, cook your pasta in salted water.
  • When the timer is up, the sauce should have thickened and your pasta can be drained and poured into the sauce. Serve with some grated parmesan and additional chilli flakes if you like it real hot. Add Salt & Pepper to taste.
