Method

1. Start by adding the turkey sausages to a large frying pan with a tbsp of olive oil on a high heat. Use your fork to break the sausage apart & leave to brown for 5 minutes.

2. After this time, remove the sausage from the pan and set aside. Add the diced onion and the finely chopped broccoli to the pan. Season with a pinch of salt and fry until the onions are translucent.

3. Before adding the liquids, gently fry the tomato puree, oregano, dried parsley, chilli flakes and garlic for around 2 minutes. Then pour the chopped tomatoes, sausage and chicken stock into the pan. Stir to combine and reduce to a simmer. Timer set to 20M.

4. During this period, cook your pasta in salted water.

5. When the timer is up, the sauce should have thickened and your pasta can be drained and poured into the sauce. Serve with some grated parmesan and additional chilli flakes if you like it real hot. Add Salt & Pepper to taste.
