- 12 salad tomatoes (£1.38)
- 2 cucumbers (£1.14)
- 1 jar of kalamata olives (£1.69)
- 2 red onions (£0.47)
Cupboard Essentials
- 5 tbsp olive oil (1 per lunch box)
- ½ tsp dried oregano
- Salt & Pepper
For these lunches, these ingredients will last for a work week but when it comes to the prep I would slice them in batches of two to prevent the tomatoes from going soggy.
Slice all the elements of the salad and pit the olives. Make sure you slice the onion super fine so that it’s not too over-powering (Maybe pack some gum for afterwards)!
Divide into the two containers and on the morning that you will be eating it, add 1 tbsp of olive oil, ½ tsp of dried oregano, salt and pepper. Shake the container and place the feta on top with a wedge of lemon to squeeze when you eat it. Easy!
