Ingredients

  • 200 g feta (£0.75)
  • 1 lemon (£0.67/4)=(£0.17)
  • 12 salad tomatoes (£1.38)
  • 2 cucumbers (£1.14)
  • 1 jar of kalamata olives (£1.69)
  • 2 red onions (£0.47)

Cupboard Essentials

  • 5 tbsp olive oil (1 per lunch box)
  • ½ tsp dried oregano
  • Salt & Pepper

Instructions

  • For these lunches, these ingredients will last for a work week but when it comes to the prep I would slice them in batches of two to prevent the tomatoes from going soggy.
  • Slice all the elements of the salad and pit the olives. Make sure you slice the onion super fine so that it’s not too over-powering (Maybe pack some gum for afterwards)!
  • Divide into the two containers and on the morning that you will be eating it, add 1 tbsp of olive oil, ½ tsp of dried oregano, salt and pepper. Shake the container and place the feta on top with a wedge of lemon to squeeze when you eat it. Easy!
