Loaded Vegetable Paella

Ingredients

  • 1 white onion, finely diced (£0.08)
  • 3 cloves garlic, minced (£0.39)
  • 1 tin of chopped tomatoes (£0.32)
  • 1 - 2 red pepper/s, diced (£0.90)
  • 350 g paella rice (£1.50)
  • 500 g bag frozen vegetable mix (£1.10)
  • 2 lemons (£0.60)

CUPBOARD ESSENTIALS

  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp turmeric
  • 800 ml vegetable stock
  • Salt & Pepper

Instructions

  • Start by frying the onion on a medium heat for around 5 minutes with 2 tbsp of olive oil. Once the onion is translucent, add the red pepper and garlic and fry together for another few minutes.
  • Increase the heat and add the chopped tomatoes. You want to cook the liquid out of the tomatoes - this will take around 3 minutes.
  • Once this has reduced, add the paprika and turmeric and season with salt and pepper. Pour in the rice and vegetable stock then stir to incorporate everything and reduce the heat to a low simmer. Cover with a lid for 20 minutes.
  • For the remaining 5 minutes of cook time, add the frozen veg and an extra splash of water if it needs it.
  • Stir to combine all the elements on a medium heat and cook for a further 10 minutes.
  • Finish off with the juice of a whole lemon and season with salt. Divide into meal prep containers and serve with a wedge of lemon. Tastyyy
