Grandma's Spanish Cod

- 425 g frozen cod fillets
- 2 tins chopped tomatoes
- 300 g white rice
- 2 cloves of garlic
- Handful of fresh parsley
- 1 lemon
Cupboard Essentials
- 2 tbsp olive oil
- Salt & Pepper
Pour the rice into a medium sauce pan and add double volume of water.. Add a handful of fresh parsley, minced raw garlic and a pinch of salt. Bring to a simmer and set the timer according to the rice you’ve chosen.
Add 2 tbsp of olive oil to a large frying pan and increase the heat. When the oil is hot, add the chopped tomatoes, they should sizzle (making them ‘tomate frito’). Gently fry for about 2 minutes
Place the cod fillets on top of the of the tomate frito and cover with a lid. This sort of steams the cod, giving it an amazing texture!
After around 15 minute the cod should be cooked through and the rice should be ready to serve.
Season with salt, pepper and a squeeze of lemon. Super easy and nutritious.
