- 1 kg baby potatoes, halved (or quartered if larger) (£0.90)
- 1 bunch of fresh chives, finely chopped (£0.50)
- Optional: squeeze of lemon
Cupboard Essentials
- ½ tbsp cornflour
- 1 tsp garlic powder
- 1 tsp onion salt
- 1 tsp dried thyme
- 1 tbsp rapeseed oil
Start by rinsing the sliced potatoes in cold water. Fill up a large bowl with cold water and add the rinsed potatoes to remove the excess starch. Soak for 10 minutes, or up to 30 minutes if you have time.
Preheat your air fryer to 190°C. Meanwhile, drain the potatoes and pat dry with a clean tea-towel.
Add the potatoes back into the bowl (dried with a tea-towel). Add the seasoning and rapeseed oil and stir to combine. Then, dust the potatoes with cornflour and stir again until all of the potatoes are evenly coated.
Pop the potatoes into the preheated air fryer and set the timer for 12 minutes. When your timer goes off, shake the potatoes to rotate and set the timer for the remaining 13 minutes.
- Soaking the potatoes in cold water removes the excess starch, helping the potatoes to crisp up.
- Use a dry tea-towel to pat the potatoes dry after soaking. We want any excess moisture to be removed to maximise crispiness.
- If you love spice, get creative and add smoked paprika, cayenne pepper, cumin or other spices. This recipe is a great recipe to build upon.
