Ingredients

  • 225 g paneer, sliced into small cubes (£1.80)
  • 5 mini naans, (£1.15)
  • 1 cucumber, diced (£0.69)
  • 250 g cherry tomatoes, sliced in half (£0.59)
  • Fresh mint (£0.55)
  • 1 red onion, thinly sliced (£0.14)
  • 5 tbsp yogurt (£0.45)

Cupboard Essentials

  • 1 tbsp rapeseed oil
  • ½-1 tbsp curry powder
  • 1 tbsp honey

Instructions

Note: For meal prep, slice the cucumber and tomatoes and store separately. Fry a portion of paneer on the day of eating to enjoy straight after frying. (approx 1 tsp curry powder, 1 tsp honey).

  • Coat the paneer in curry power, honey and oil. Pour into a hot non-stick pan over a high heat. Fry the pieces for 2 minutes, then rotate and repeat until a few sides are crispy and golden. Season with salt.
  • Toast your naan, then add a layer of yogurt. Top with crispy paneer, cherry tomatoes, cucumber, red onion and fresh mint. Season with pepper and optional chilli flakes. Enjoy!
