Note: For meal prep, slice the cucumber and tomatoes and store separately. Fry a portion of paneer on the day of eating to enjoy straight after frying. (approx 1 tsp curry powder, 1 tsp honey).
Coat the paneer in curry power, honey and oil. Pour into a hot non-stick pan over a high heat. Fry the pieces for 2 minutes, then rotate and repeat until a few sides are crispy and golden. Season with salt.
Toast your naan, then add a layer of yogurt. Top with crispy paneer, cherry tomatoes, cucumber, red onion and fresh mint. Season with pepper and optional chilli flakes. Enjoy!
