10 Minute Spicy Peanut Butter Noodles

Don't knock spicy peanut butter noodles until you try them! They're uber-flavourful and creamy, making them an excellent comfort meal.

Ingredients

  • 4 tbsp peanut butter (£1.12/5)=£0.22)
  • 250 g egg noodles (£0.75)
  • 2 garlic cloves, minced (or garlic powder) (£0.39)
  • 4 spring onions, thinly sliced (£0.50)

Cupboard Essentials

  • 1 tbsp Sriracha (£1.98)
  • tbsp tbsp rice vinegar
  • 200 ml hot water
  • 2 tbsp soy sauce or Sweet Soy Sauce if you have
  • Optional chilli flakes

Instructions

  • Cook the noodles according to packet instructions, setting your timer to the packet time minus 1 minute.
  • Meanwhile, combine peanut butter, minced garlic, sriracha, rice vinegar, soy sauce and hot water in a large mixing bowl.
  • Drain the noodles and reserve a mug of the starchy water. Combine the noodles with the peanut butter and continue to cook on a low heat until the sauce thickens and the noodles cook completely. Loosen with the reserved water as necessary.
  • Serve with sliced spring onions and optional chilli flakes.

Notes

  • Use thin or medium-sized noodles, such as egg noodles, vermicelli, rice noodles, soba noodles or spaghetti.
  • Make the sauce ahead of time and cook the noodles the day you want to eat. Add more Sriracha sauce if you prefer it spicier.
  • Add toppings such as peanuts, coriander, and chili flakes along with the sliced spring onions.
