Frozen Yogurt Bark with Berries

- 200 g frozen raspberries (£1.75/3)=(£1.16)
- 90 g white chocolate (£0.98)
- 500 ml (0% fat ) natural yogurt (£0.89)
Cupboard Essentials
- 1 tsp vanilla extract
- 2 tbsp honey
- 150 ml water
Start by adding the frozen raspberries into a medium saucepan. Add the water & honey and cook on a medium heat until you achieve a 'coolie' like consistency. Set aside in a bowl to cool.
Next, melt the white chocolate in a bowl over boiling water.
Combine the cooled raspberry sauce with the natural yogurt and vanilla extract in a mixing bowl and pour into in a 12 inch by 10inch tray. Then, add small spoonfuls of melted white chocolate across the tray. Using the other end of a spoon or spatula, drag the spoon through the white chocolate to form the funky swirls.
Pop in the freezer for around 2-3 hours, or until firm. Slice into individual portions once frozen so you can take out individual slices and enjoy.
- When making yogurt bark, choose smaller fruit pieces to ensure easy cutting after setting. Large fruit bits can make the bark difficult to slice.
- Line the baking sheet with parchment paper before pouring the yogurt mixture. This prevents sticking and makes removal much easier.
- Allow the yogurt bark to set properly by freezing for around three hours. Avoid removing it prematurely to prevent gooey spots and ensure a satisfying texture.
