Instant Coffee Mocha Porridge

Ingredients

  • 100 g oats (£0.75)
  • 1.5 tsp instant coffee (£0.70)
  • 2 tsp cocoa powder (£1.19)
  • ½ pint oat milk (£0.85)
  • ½ pint of water

Cupboard Essentials

  • 3 tbsp honey
  • Optional a few dates and walnuts to garnish

Instructions

  • Start by adding the oats, water and oat milk in a medium saucepan over a low heat.
  • Meanwhile, combine the instant coffee and cocoa powder in a small bowl with a splash of water. This will prevent any lumps forming when the ‘mocha’ mix is added to the pan.
  • After around three minutes, as the porridge starts to thicken, add the mocha mix into the pan and stir to combine. Also add the honey at this stage and adjust the sweetness to taste. Cook until you achieve your desired thickness.
  • Serve the porridge in two bowls and garnish with chopped dates and walnuts. Add an extra drizzle of honey if you like your porridge on the sweeter side.
