Simple Shakshuka

Try this Simple Shakshuka dish to spice up your usual egg breakfast! It's one pan, warm, tasty and the eggs are poached in a delicious sauce.

Ingredients

  • 1 tin of chopped tomatoes (£0.32)
  • 4 eggs (£0.82/6)=(£0.55)
  • 2 cloves of garlic (£0.69/3)=(£0.23)
  • ½ packet of fresh parsley (£0.50)
  • 50 g feta (£0.75/4)=(£0.19)

Cupboard Essentials

  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp chilli powder
  • Chilli flakes
  • Salt & Pepper

Instructions

Preheat oven to 180°C

  • Add the olive oil to your pan and the minced garlic, frying on a low heat.
  • After about a minute, add the chopped tomatoes and season with the smoked paprika and chilli powder.
  • Heat the mixture for about 5 minutes, stirring frequently.
  • Remove your pan from the heat and using a tablespoon form 4 little holes in your tomato mixture and crack the eggs into them.
  • Pop your pan in the oven and set the timer for 8 minutes. When the whites aren’t translucent anymore you know it’s ready! Crumble some feta on top and season with parsley, salt and pepper (+ optional chilli flakes)
