Fajita Lettuce Wraps

Ingredients

  • 2 baby gem lettuces (£0.65)
  • 2 chicken breasts-diced (£3.00/2)=(£1.50)
  • 1 white onion (£0.09)
  • 300 g frozen sliced peppers (£0.87/2)=(£0.44)
  • 1 avocado (£1.12/2)=(£0.56)
  • Handful of cherry tomatoes (£0.48)
  • Handful of coriander, optional (£0.50)

Cupboard Essentials

  • ½ tsp chilli powder
  • 2 tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp cumin
  • ½ tsp cayenne pepper
  • 1 tbsp coconut oil
  • Salt & Pepper

Instructions

  • Melt the coconut oil in a mug for 30 seconds and add the fajita seasoning to the liquid.
  • Dice two large chicken breasts and add them to a pan, pouring the oil mix onto the chicken and stirring.
  • Gently fry the chicken with the sliced onion for 10 minutes and then add the frozen peppers to the pan.
  • Meanwhile, mash the avocado and slice up the tomatoes. Season with salt and pepper.
  • Lay out the ‘lettuce boats’ and pop the chicken/pepper mix into them. Add the avocado and tomato and pop on some coriander.
