Ingredients

  • 1 cucumber (£0.60)
  • 2 x 6 pack salad tomatoes (£1.32)
  • 165 g jar black pitted olives (£0.55)
  • 200 g greek feta (£0.75)
  • 1 large red onion (£0.15)
  • 1 lemon (£0.15)

Cupboard Essentials)

  • 1 tbsp extra virgin olive oil
  • 1 tsp of dried oregano
  • Salt

Instructions

  • Chop all the ingredients up and mix in a large bowl with a tbsp of extra virgin olive oil. Season with 1 tsp of dried oregano, squeeze of lemon and salt. The feta is pretty salty though, so you don’t need that much.

For meal prep, don’t add the feta, lemon or oil until the day that you eat it otherwise you’ve got yourself a soggy salad. So simple that the method listed is pretty pointless, enjoy!
