Sweet Chilli Tuna Frittatas

Ingredients

  • 1 tin of tuna (£0.64)
  • 1 courgette (£0.39)
  • 1 egg (£0.13)
  • 100 g wholemeal flour (£0.10)
  • 4 tbsp sweet chilli sauce (£0.25))
  • Bag leaf salad (£0.60)

Cupboard Essentials

  • 1 tbsp olive oil
  • Salt & Pepper

Instructions

  • Grate your courgette, pat dry and mix with the drained tuna. Add the egg and mix.
  • Measure out your flour and sieve slowly into your mixture continually stirring.
  • Using your hands, separate the mixture into 6 frittatas using your palms to get that burger shape. Add a little salt and pepper.
  • Add 1 tbsp of oil to a frying pan and once the oil is heated add your frittatas to the pan. Heat on each side for around 7 minutes until you get a crispy outer layer.
  • Serve with sweet chilli and a side salad and you’ve got yourself a filling, healthy meal.
