Ingredients

  • 500 g lean turkey mince (£3.55)
  • 50 g spring onions (£0.40)
  • 1 egg £0.88/6)= (£0.15)
  • 200 g mixed leaf salad (£0.70)
  • 250 g cherry tomatoes (£0.48)

Cupboard Essentials

  • 1 tsp cumin
  • ½ tsp coriander
  • 1 tsp chilli flakes
  • 1 tbsp olive oil
  • Salt & Pepper

Instructions

  • Add the turkey mince and chopped spring onion to a bowl to mix.
  • Crack the egg into a small bowl and whisk together. In a separate bowl, measure out a table spoon of the whisked egg (approx. half) and stir in the seasoning listed above with some salt and pepper. This makes it easier to thoroughly coat the mince with the seasoning.
  • Pour the seasoned eggy mix onto the mince and stir, ensuring its coating the mince evenly.
  • Using your hands, shape the mix into around 9 burgers. Pop them in a pan with tbsp of olive oil on a medium heat and grill for around 7 minutes on each side.
  • Serve with a side salad and you’re all set! Recipe makes around 3 burgers per portion with an amazing 38g of protein per meal.
