- 150 g red lentils (£0.35)
- 500 g carrots (£0.29/2)=(£0.15)
- 1 tin of coconut milk (£0.75)
- 3 small onions/1 large (£0.55/5)=(£0.11)
- Bunch of fresh parsley (£0.29)
- Yogurt (£0.45)
Cupboard Essentials
- 1 litre vegetable stock
- 1 tsp turmeric
- 1 tsp curry powder
- ½ tsp cumin
- Chilli flakes
- 1 tbsp coconut oil
- Salt & Pepper
Minimal effort, super filling and hella cheap (& obviously tasty).
Roughly chop the onions, carrots and garlic. This will be blended later so it can be very rough!
Gently sauté the onions and garlic in 1 tbsp of coconut or olive oil for around 6 mins season with the turmeric, curry powder and cumin.
Once the onions have turned translucent, add the rest of the ingredients apart from the fresh parsley.
Simmer on low for 30 minutes.
Once the time is up, blend until you get your desired texture.
Season with salt and pepper & serve up with some fresh parsley, a dollop of yogurt if you have some spare and some chilli flakes.
