Red Lentil and Coconut Soup

Ingredients

  • 150 g red lentils (£0.35)
  • 500 g carrots (£0.29/2)=(£0.15)
  • 1 tin of coconut milk (£0.75)
  • 3 small onions/1 large (£0.55/5)=(£0.11)
  • Bunch of fresh parsley (£0.29)
  • Yogurt (£0.45)

Cupboard Essentials

  • 1 litre vegetable stock
  • 1 tsp turmeric
  • 1 tsp curry powder
  • ½ tsp cumin
  • Chilli flakes
  • 1 tbsp coconut oil
  • Salt & Pepper

Instructions

Minimal effort, super filling and hella cheap (& obviously tasty).

  • Roughly chop the onions, carrots and garlic. This will be blended later so it can be very rough!
  • Gently sauté the onions and garlic in 1 tbsp of coconut or olive oil for around 6 mins season with the turmeric, curry powder and cumin.
  • Once the onions have turned translucent, add the rest of the ingredients apart from the fresh parsley.
  • Simmer on low for 30 minutes.
  • Once the time is up, blend until you get your desired texture.
  • Season with salt and pepper & serve up with some fresh parsley, a dollop of yogurt if you have some spare and some chilli flakes.
