Turkey Steaks with Curried Veggies

Ingredients

  • 375 g turkey steaks (£2.59)
  • 1 kg sweet potatoes (£0.95)
  • 1 cauliflower (£0.75)
  • 1 broccoli (£0.62)

Cupboard Essentials

  • 3 tbsp curry powder
  • ½ tbsp honey
  • tsp ground coriander
  • 4 tbsp coconut oil
  • Salt

Instructions

  • Start rinsing and roughly chopping the potatoes, cauliflower and broccoli, stems and leaves included. (Remove the hardest part of the stems at the bottom).
  • Add to a large baking tray with the veg seasoning; 2 tbsp curry powder, 1 tsp of ground coriander and 3 tbsp of coconut oil and spread with your hands to ensure an even coating. You can microwave the coconut oil for 30 seconds to melt it for easier spreading. Pop in the oven. Timer set to 45 minutes.
  • Meanwhile, create the marinade for the turkey steaks by combining 1 tbsp of curry powder, ½ tbsp honey, ½ tsp of ground coriander and add this to 1 tbsp of melted coconut oil. Add the turkey steaks and stir in. Cover and pop in the fridge.
  • Once the vegetables have been cooking for half an hour. Add the turkey steaks to a large frying pan and fry each side for 5 minutes.
  • The veg should be ready by the time the turkey is finished so you can plate up and add to your meal prep containers. Microwave for 2 minutes each time you eat!
