Ingredients

  • 125 g self raising flour (£0.45)
  • 2 Bananas (£0.88)
  • ½ pint semi skimmed milk (£0.49)
  • 1 egg (£0.15)
  • Strawberries (£1.75)
  • Walnuts (£1.29)

Cupboard Essentials

  • 1 tsp of baking powder
  • Maple syrup
  • 1 tbsp coconut oil

Instructions

Make it easier to get out of bed by tryin out these healthy pancakes! Can be prepped on Sunday ready for the week ahead, only needing one minute in the microwave and a sprinkle of the toppings. Easy as pieee!

  • Combine all of the pancake mixture in a bowl and whisk until smooth.
  • Add 1 tbsp of coconut or olive oil to a frying pan with a medium heat. Pour the mixture (1 ladle for a large pancake, 1 large spoon for an American style pancake) and gently fry.
  • Flip the pancake when little holes start to appear on the top and it’s looking firm. Repeat till the mix is used up!
  • Divide the pancakes into 6 meal prep containers, putting 3 in the fridge and 3 in the freezer.
  • On the morning that you are eating the pancakes, heat in the microwave for 1 minute (4 minutes for the frozen batch) and serve with the toppings listed above.
