Ingredients

  • 5 (½ pack) bacon rashers (£1.69/2) = (£0.85)
  • 3 handfuls of spinach (£0.80)
  • 1 white onion (£0.60/3) = (£0.20)
  • 3 handfuls of peas (£0.68)
  • 3 tins of butter beans/cannellini beans (£0.46 x3)= (£1.38)
  • Bunch of fresh basil (£0.48)

Cupboard Essentials

  • 1 tbsp mixed herbs
  • 300 ml chicken stock
  • 1 tbsp olive oil
  • Black pepper
  • Chilli flakes optional

Instructions

  • Start by slicing the onion into thin pieces and chopping the bacon into small chunks.
  • Add 1 tbsp of olive oil to a large non-stick saucepan along with the onions, mixed herbs and bacon. Gently fry for around 8 minutes.
  • After this time, the bacon should be nice and crispy and the onions should be translucent and soft. Now it’s time to add the drained butter beans, peas and stock. Using your spatula, mash a few of the beans to release the starches, this will help to thicken the sauce.
  • Cook for around 10 minutes, until the 300ml chicken stock has reduced down to a sauce. At this point, stir in the spinach and chopped fresh basil. Once the spinach has wilted you’re all good to go!
  • Serve up with lots of black pepper, some additional fresh basil & optional chilli flakes if you like the heat.
