- 1 red cabbage (£0.62)
- A couple of spring onions (£0.48)
- 500 g carrots (£0.29)
- 1 cucumber (£0.57)
- 2 limes (£0.69)
- 2 tbsp smooth peanut butter (£1.09)
Cupboard Essentials
- ½ tsp rice wine vinegar
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 1 tsp Siracha
- Salt
5 meal prep bowls that take 10 minutes to assemble, winner winner.
Start by whisking all the ingredients for the dressing in a large mixing bowl including 2 tbsp smooth peanut butter, ½ tsp rice wine vinegar, 2 tbsp Soy sauce, 2 tbsp olive oil, 2 tbsp water, 1 tsp Siracha and ½ juice of a lime. Pour the dressing into a sealed container, separate to the salads. I know in the pic the dressing is on all of them – this is for the gram
Finely slice the red cabbage, the carrot and cucumber and divide into your meal prep containers. Garnish with some sliced spring onions.
On the day of eating, serve a tbsp of dressing onto the salad a pinch of salt and a wedge of lime. Fresh delishnesss
