Ingredients

  • 1 red cabbage (£0.62⁠)
  • A couple of spring onions (£0.48⁠)
  • 500 g carrots (£0.29⁠)
  • 1 cucumber (£0.57⁠)
  • 2 limes (£0.69⁠)
  • 2 tbsp smooth peanut butter (£1.09⁠)

Cupboard Essentials

  • ½ tsp rice wine vinegar⁠
  • 2 tbsp soy sauce⁠
  • 2 tbsp olive oil ⁠
  • 1 tsp Siracha⁠
  • Salt

Instructions

  • 5 meal prep bowls that take 10 minutes to assemble, winner winner. ⁠
  • Start by whisking all the ingredients for the dressing in a large mixing bowl including 2 tbsp smooth peanut butter, ½ tsp rice wine vinegar⁠, 2 tbsp Soy sauce, 2 tbsp olive oil, 2 tbsp water⁠, 1 tsp Siracha⁠ and ½ juice of a lime. Pour the dressing into a sealed container, separate to the salads. I know in the pic the dressing is on all of them – this is for the gram ⁠
  • Finely slice the red cabbage, the carrot and cucumber and divide into your meal prep containers. Garnish with some sliced spring onions.
  • On the day of eating, serve a tbsp of dressing onto the salad a pinch of salt and a wedge of lime. Fresh delishnesss
