Chocolate Chip Banana Pancakes

Ingredients

  • 2 bananas (£0.90)
  • 100 ml milk (£0.50)
  • 1 egg (£0.20)
  • 30 g chocolate chips (£0.60)

Cupboard Essentials

  • 1 tbsp of coconut oil
  • 1 tsp baking powder
  • 4 tbsp plain flour

Instructions

I have a savoury tooth so get out of bed for my scrambled eggs, but know that isn’t the same for a lot of people so here you go! Natural sweetness paired with a bit of unnatural sweetness ( eg of chocolate chips are going to do you no harm)

  • Start by adding all of the ingredients into a blender, apart from the chocolate chips.
  • Add 1 tbsp of coconut oil to a frying pan on a medium heat. Rotate the pan so that the oil is evenly distributed.
  • Slowly pour a small amount of the pancake mix onto the pan, getting really close with your spoon as you place it down.
  • Quickly, before it starts to cook, sprinkle some chocolate chips onto the pancake. Repeat until you’ve filled your pan with mini pancakes.
  • The pancake will be ready to flip over when little air pockets start to form and it holds it’s shape. When this has happened, flip it over and cook for another minute or two.
  • Divide the pancakes into two portions and pop one in the fridge, and eat one right away. If you like it extra sweet you can add a drizzle of maple syrup. When it’s time for the next breakfast, add to the mic for 1 minute and enjoy.
