Ingredients

  • 3 courgettes (£1.15)
  • 250 g mixed cherry tomatoes (£1.29)
  • 1 jar green pitted olives (£0.49)
  • 200 g feta (£0.95)
  • 1 bag of wild rocket (£0.48)
  • 1 lime/lemon (£0.20)

Cupboard Essentials

  • 4 tbsp olive oil (1 tbsp per meal prep container)
  • Salt & Pepper

Instructions

  • Start by grating 1½ courgettes; I meal prepped for 2 days at a time to keep the crunchiness and freshness of the salad.
  • Slice half the tomatoes and a handful of pitted olives. Combine in a mixing bowl and divide into the meal prep containers.
  • On the morning that you will be eating it, add a handful of rocket, and ¼ of the pack of feta (crumbled with the back of a fork). Drizzle a tbsp of extra virgin olive oil and season with salt and pepper.
  • Optional squeeze of lemon/lime tastes amazing! I bought lots of limes for the Tex mex recipe so used some for this recipe too
