Sweet Chilli Halloumi Wrap

This is an amazing quick vegetarian lunch option. This halloumi wrap is infused with sweet chilli and takes less than 15 minutes to make!

Ingredients

  • 225 g low fat halloumi, thinly sliced (£2.00)
  • 1 tbsp sweet chilli sauce (£1.50/4)=(£0.38)
  • 1 cucumber, ⅓ grated, ⅔ thinly sliced (£0.45)
  • 200 ml Greek yogurt (£0.85/2)=(£0.43)
  • 2 heads of baby gem lettuce (£0.75)
  • 4 large white wraps (£0.95)
  • 1 carrot, grated/sliced into matchstick pieces (£0.09)
  • 1 bunch of coriander (£0.55)
  • 1 clove garlic, minced (£0.75/3)=(£0.25)
  • ½ lime, juiced (£0.20)

Cupboard Essentials

  • 1 tbsp rapeseed oil
  • Salt & Pepper
  • Red pepper flakes/chilli flakes

Instructions

  • Start by adding the sliced halloumi into a bowl and coat with the sweet chilli sauce and a pinch of chilli flakes if you like a little heat. Mix to ensure all of the pieces are coated and marinade for at least 15 minutes/up to 24 hours if possible.
  • Add rapeseed oil to a non-stick frying pan over a medium heat. Place the sweet chilli halloumi into the pan and fry each side until golden brown, around 2 minutes on each side. Add the minced garlic half-way through.
  • Meanwhile, make your tzatziki by combining the Greek yogurt, grated cucumber, lime juice and a generous pinch of salt.
  • Layer the wrap by adding a big dollop of tzatziki and spreading to coat the middle of the wrap. Add around 3 leaves of baby gem lettuce, a generous amount of sliced cucumber, carrot and then sweet chilli halloumi.
  • Optionally add an extra drizzle of sweet chilli and tzatziki and top with coriander. Fold and enjoy!

Notes

  • Use a non-stick frying pan to prevent burning when cooking halloumi with sweet chilli sauce.
  • Thinly slice the halloumi into 12 pieces to ensure each wrap bite has few pieces of sweet chilli halloumi.
  • Add spice to the dish by incorporating chili flakes while frying the halloumi if desired.
