Ingredients

  • 1 kg chicken thighs (£1.65)
  • 1 bag of kale (£0.39)
  • 1 tin of new potatoes (£0.35)
  • 1 lemon (£0.15)

Cupboard Essentials

  • 1 tbsp of oregano
  • 1 tbsp olive oil
  • Salt & Pepper

Instructions

Preheat oven to 190°C

  • Start by cutting off the excess skin on the chicken thighs. This is the skin that hangs off the actual thigh and is not directly attached to the meat itself. Easy way to reduce calories while keeping the crispiness/ flavour of the skin!
  • Add all the ingredients to the tray with a drizzle of olive oil. Cut your lemon in half and squeeze over the ingredients before slicing and adding to the tray.
  • Season with the oregano, salt and pepper and pop in the oven for an hour.
  • Ideal for meal prep and packed full of protein and nutrients. Tag a friend that you’d share this tray bake with!
