- 300 g orzo (£0.65)
- 1 cucumber (£0.60)
- 2 handfuls of black pitted olives (£0.54)
- ½ jar sundried tomatoes (£0.99)
- Bunch of fresh basil (£0.48)
- 2 lemons (£0.40)
- Bag of rocket (£0.60)
Start by adding the orzo into a medium saucepan with boiling water. Bring to a simmer and set the timer according to the packet, this orzo was 8 minutes.
Prep the salad elements by dicing the cucumber, finely chopping the basil, tearing the drained olives and slicing the sundried tomatoes.
Once the orzo is ready, drain and rinse through with cold water until the orzo is cold. You don’t want it to be hot otherwise it’ll effect the fresh flavour!
Combine all the ingredients in a large mixing bowl and stir in a drizzle (around 3 tbsp) of the infused sun-dried tomato oil. Season with salt and divide into your meal prep containers.
In the morning, before heading out the door- add a handful of rocket and a wedge of lemon to squeeze when you eat it.
