Ingredients

  • 300 g orzo (£0.65)
  • 1 cucumber (£0.60)
  • 2 handfuls of black pitted olives (£0.54)
  • ½ jar sundried tomatoes (£0.99)
  • Bunch of fresh basil (£0.48)
  • 2 lemons (£0.40)
  • Bag of rocket (£0.60)

Instructions

  • Start by adding the orzo into a medium saucepan with boiling water. Bring to a simmer and set the timer according to the packet, this orzo was 8 minutes.
  • Prep the salad elements by dicing the cucumber, finely chopping the basil, tearing the drained olives and slicing the sundried tomatoes.
  • Once the orzo is ready, drain and rinse through with cold water until the orzo is cold. You don’t want it to be hot otherwise it’ll effect the fresh flavour!
  • Combine all the ingredients in a large mixing bowl and stir in a drizzle (around 3 tbsp) of the infused sun-dried tomato oil. Season with salt and divide into your meal prep containers.
  • In the morning, before heading out the door- add a handful of rocket and a wedge of lemon to squeeze when you eat it.
