Start by marinading the turkey steaks in 1 tbsp of olive oil, 2 tsp of smoked paprika, 1 tsp of oregano and a pinch of salt & pepper. You could do any marinade you like as the veg is a neutral flavour. Cover the bowl and pop in the fridge.
Roughly chop the peppers, onions, aubergine and courgette and add to two large baking trays. Drizzle 1 tbsp of olive oil over each tray and season with salt and pepper. I added some red pepper flakes for some heat. Chuck in the oven, timer set to 45 minutes.
Relax and rotate the trays half way through.
In the remaining ten mins, add the turkey steaks to a large frying pan on a high heat. Fry for 5 minutes on one side to get a nice char, and then 3 minutes on the other.
Once the veg is ready, divide it into each container and place the sliced turkey steaks on top.
I popped 2 in the fridge and 3 in the freezer ready for the week.
