- 200 g feta (£0.85)
- 8 eggs £2.60/12x8=(£1.73)
- Fresh coriander, roughly chopped to garnish (£0.60)
- Fresh chives, thinly sliced (£0.60)
- 8 mini wraps (£0.75)
Cupboard Essential
- 2 tbsp rapeseed oil
- Sprinkle of smoked paprika
- Hot sauce
Start by adding a little drizzle of rapeseed oil into a non-stick pan over a medium/high heat.
Next, add a ring of crumbled feta into the pan, approximately the size of your mini wrap.
Crack your egg into the center and increase the heat slightly. Cook until the whites are firm and the yolk is still runny. Use a spatula to scoop up the crispy base and place onto a wrap.
Top with a drizzle of hot sauce, a sprinkle of salt, chives and coriander. Enjoy!
Note: Try to ensure there aren't any huge gaps between the feta when forming the ring, this will prevent the egg whites from spreading too far.
