Creamy White Beans with Parmesan (Cannellini Beans)

Ingredients

  • 1 onion, finely diced (£0.15)
  • 3 cloves of garlic, minced (£0.39)
  • 3 (x cans) of cannellini beans,  drained and rinsed (£0.65x3)=(£1.95)
  • 80 g hard cheese, finely grated + extra to serve (£1.74/2)=(£0.87)
  • 100 ml single cream £1.20/2=(£0.60)
  • 160 g tenderstem broccoli, steamed to serve (£0.99)

Cupboard Essentials

  • 1 tbsp olive oil
  • 1 tbsp coarsely ground black pepper
  • 200 ml chicken or vegetable stock
  • Salt

Instructions

  • Start by adding the olive oil and diced onion into a non-stick frying pan. Season with salt and saute for 6 minutes.
  • Once softened, add the pepper and garlic and fry for a further 2 minutes, then add the white beans, stock and cream. Cook for 7 minutes, adding the parmesan half way through.
  • Meanwhile, steam the broccoli until tender.
  • Serve with fresh basil and an extra sprinkle of black pepper & flaky salt.

Notes

  • Drain and rinse canned white beans to reduce salt content and prevent an overly salty dish.
  • Customise the recipe to your taste by increasing the amount of garlic for a more pronounced flavor.
