- 1 onion, finely diced (£0.15)
- 3 cloves of garlic, minced (£0.39)
- 3 (x cans) of cannellini beans, drained and rinsed (£0.65x3)=(£1.95)
- 80 g hard cheese, finely grated + extra to serve (£1.74/2)=(£0.87)
- 100 ml single cream £1.20/2=(£0.60)
- 160 g tenderstem broccoli, steamed to serve (£0.99)
Cupboard Essentials
- 1 tbsp olive oil
- 1 tbsp coarsely ground black pepper
- 200 ml chicken or vegetable stock
- Salt
Start by adding the olive oil and diced onion into a non-stick frying pan. Season with salt and saute for 6 minutes.
Once softened, add the pepper and garlic and fry for a further 2 minutes, then add the white beans, stock and cream. Cook for 7 minutes, adding the parmesan half way through.
Meanwhile, steam the broccoli until tender.
Serve with fresh basil and an extra sprinkle of black pepper & flaky salt.
