- 300 g green lentils (£0.50)
- 2 large carrots (£0.10)
- 1 large celery stick (£0.15)
- 2 white onions (£0.20)
- 2 cloves garlic (£0.06)
- 1 tin of chopped tomatoes (£0.29)
- 1 potato (£0.20)
- 1 tin chickpeas (£0.33)
- 4 tbsp sour cream (£0.40)
Cupboard Essentials
- 750 ml vegetable stock
- 2 tbsp olive oil
- Chilli flakes
- Salt & Pepper
Start by peeling and chopping the onions. Add to a large non-stick pan with 2 table spoon of olive oil. When the onions are almost translucent add the chopped garlic and the tin of tomatoes and continue to gently fry.
In the same saucepan add the lentils, chickpeas, peeled carrots, chopped celery and cubed potatoes. Add 750ml of vegetable stock with some salt and pepper!
Boil for around 20 minutes giving a stir now and then and add some extra water if needed. Once its ready, serve with a dollop of sour cream and some chilli flakes!
So simple and perfect to bring to work!
