Ingredients

  • 500 g (less than 3% fat) turkey mince (£1.97)
  • 3 courgettes (£1.19)
  • 2 tins plum tomatoes (£0.56)
  • 3 small onions (£0.20)
  • 1 egg (£0.15)
  • 200 g wholemeal spaghetti (£0.39)
  • 2 cloves of garlic (£0.06)
  • 50 g parmasan (£0.70)

Cupboard Essentials

  • 1 tsp dried thyme
  • 1 tsp oregano
  • 1 tbsp olive oil
  • Salt & Pepper

Instructions

  • Start finely dicing one of the onions and mincing the garlic.
  • In a mixing bowl, combine the mince, diced onion, minced garlic, one tbsp of parmesan and egg. Season with 1tsp of dried thyme and salt.
  • Using your hands, shape the mix into balls and lay out on a greased baking tray. Pop in the oven with a timer set to 15 minutes.
  • Meanwhile, saute the rest of the onion (sliced) and garlic in a saucepan for around 5 minutes with a tbsp olive oil. Season with 1 tsp of oregano.
  • After this add the plum tomatoes and 1 tin of water to the saucepan. Reduce to simmer.
  • Pop the spaghetti on and set the timer according to the packet.
  • While everything is cooking, spiralize the courgettie so it is ready to blanch in the pasta water for the final minute of cooking.
  • The meatballs should be ready at this stage so you can pour them into the marinara sauce and serve up with the spaghetti/courgetti mix when its ready.
  • Finish with a sprinkle of parmesan
