Ingredients

  • 600 g diced chicken breast (£2.99)
  • 1 kg frozen mixed vegetables (£0.79)
  • 250 g (1 packet) golden vegetable rice (£0.49)
  • 1 tin chopped tomatoes (£0.29)
  • 1 lemon (£0.17)
  • 1 jar black pitted olives (£0.49)
  • Bunch of fresh basil (£0.48)
  • 2 cloves of garlic

Cupboard Essentials

  • 1 tbsp smoked paprika
  • 1 tbsp coconut oil
  • 1 chicken stock cube
  • Salt

Instructions

No prep, one pan, reduced carb.

  • Add the diced chicken breast into a large saucepan with a tbsp of coconut oil. Season with 1 tbsp of smoked paprika, the juice of half a lemon and a sprinkle of salt.
  • After 5 minutes, add the chopped tomatoes and minced garlic into the pan. Simmer for five minutes on a medium heat.
  • Pour in the frozen vegetables and around ½ tin of water with a chicken stock cube to loosen up the sauce and add flavour. Add the rice & drained olives at this stage too. Cook for a further 5 minutes.
  • In the final minute, stir in the chopped basil and season with salt.
  • Serve up with a squeeze of fresh lemon and you’re good to go. Microwave for 2 minutes when reheating for meal prep
