Green Shakshuka

Start the day with this Green Shakshuka. It’s an easy, healthy, one pan dish made with leeks, kale and poached eggs. Garnish with some salty feta and enjoy!

Ingredients

  • 4 eggs (£0.90)
  • 2 leeks (£0.95)
  • 100 g kale (£0.50)
  • 1 onion (£0.49)
  • 50 g feta (£0.95)

  • 1 tbsp olive oil

Instructions

Preheat the oven/ grill to 180°C

  • Start by cutting lengthways into the leek and rinsing under a tap. Then roughly chop and add to a large frying pan with a tbsp of olive oil on a medium heat.
  • Meanwhile, roughly slice your onion and add into the pan. Fry for around 6 minutes, until the leeks are soft and the onion is translucent.
  • At this stage, season with salt and add the kale. Fry for around 2 minutes until it starts to reduce and soften.
  • Make 4 little holes and crack the eggs into them. Sprinkle on some red pepper flakes for a lil heat and some feta. Pop under the grill for 6-8 minutes and enjoy! (I got distracted and overcooked mine a little).
