Ingredients

  • 8 frozen sausages (£1.00)
  • 2 tins of baked beans (£0.29 x2)=(£0.58)
  • 4 eggs (£0.89)
  • 8 hash browns (£0.90)
  • 1 beef tomato,sliced into 1/8ths (£0.55)

Cupboard Essentials

  • 3 tbsp olive oil

Instructions

Preheat oven to 190°C

  • Pop the hash-browns and sausages onto a baking tray and place in the oven, timer set to 18 minutes.
  • After 15 minutes, add 1 tbsp of olive oil to a frying pan on a high heat and place the tomatoes onto the pan. Sear each side of the tomato for around 2 minutes and then set aside.
  • Add the remaining olive oil into a frying pan on a high heat. Wait for the oil to heat and then crack the eggs into the pan. Depending on the size of your pan, either do them in batches of two or all at once. Reserve some oil if you’re doing it in batches.
  • During the 2 minutes that it takes to cook the eggs, pop the beans in the microwave for this period. Once the egg whites are firm, plate up the fried eggs with a serving of beans.
  • The sausages and hash browns should be ready to serve at this point so add these to the plates along with the seared tomato. Bon appetit! Happy hangover x
