Banh Mi Inspired Salad

This beauty of a salad is inspired by the Vietnamese Bahn Mi sandwich but turned into a salad to make a beautiful light lunch. It's quick and easy to make and so tasty!

Ingredients

  • 1 pork loin steak (£2.30/4)
  • 1 carrot (£0.30/4)
  • ¼ cucumber (£0.45/4)
  • 10 g spring onions (£0.55/4)
  • Bunch of fresh coriander (£0.50/4)
  • 1 romaine lettuce (£0.90/4)
  • 1 lime wedge (£0.80/4)=(£0.20)

Dressing - Cupboard Essentials

  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tbsp olive oil
  • Optional splash of fish sauce
  • Mayonnaise, optional
  • Sriracha sauce, optional

Instructions

Portion cost calculated from 4 portions eaten throughout the week. Best to make this one fresh as you go.

  • Start by marinating to the pork loin, adding the soy sauce, honey, half the oil and optional splash of fish sauce. Use your tongs to evenly coat the pork and set aside.
  • Prep the veg by slicing the carrots into matchstick pieces, the cucumber into rounds and the spring onions on a diagonal for an aesthetic look. Also rinse and chop the lettuce at this stage.
  • After doing all this the pork loin should have marinated for around 10 minutes. Use the remaining oil to add to a frying pan on a high heat and after preheating the pan, add the loin. Fry each side for around 3-4 minutes, depending on how high the heat is.
  • Assemble the salad by adding the lettuce as a base and then adding the chopped veg around the edge. Place the pork (now sliced into strips) into the bowl and garnish with fresh coriander and a wedge of lime. For the full banh mi effect, add a squeeze of sriracha and mayonnaise to top. So delicious!
