Stir Fry Pork and Instant Noodles
This stir fry pork and instant noodle dish is great for those busy weeknights when you want a quick tasty dinner. Just a few ingredients and ready in just 20 minutes.

- 500 g lean pork mince (5% fat) (£3.00)
- 3 carrots (£0.30)
- 3 courgettes (£0.80)
- 1 bunch of spring onions (£0.75)
- 340 grams (3 x 80g packs) instant noodle. I used Indo Mie Mi Goreng (£0.40 x3)=(£1.20)

Cupboard Essentials
- 2 tbsp soy sauce (£0.45)
- 400 ml chicken stock
- 2 tbsp olive oil
Start by prepping the vegetables. Spiralize the courgettes & carrots, chop the spring onions diagonally for that fancy look and slice the chillies (& deseed for a mild flavour if you want).
Add the pork mince to a large frying pan with a tbsp of olive oil. Use the packet sachet/sauces to flavour the mince and fry for around 8 minutes with half the spring onions.
After the mince has fried for this duration, add the ramen and stock. Cover with a lid or another pan like I did if you don’t have a lid big enough. This will help the noodles to steam where they aren’t submerged in the stock.
Once the noodles have softened, add the courgette and carrot with a few tbsp of soy sauce. Season with a pinch of salt and simmer for a further 5 minutes.
When it’s time to eat, garnish with some of the reserved spring onion and chillies. So tasty! One of my fave noodle dishes ever.
