- 125 g goats cheese, sliced into rounds (£2.40)
- 250 g cherry tomatoes, thinly sliced (£0.60)
- 1/4 red onion, thinly sliced (£0.10)
- 80 g rocket, served as a garnish and side (£0.80)
- 320 g puff pastry (£1.25)
- 75 ml (5 tbsp-ish) of passata (£0.55)
Cupboard Essentials
- 1 tsp dried thyme
- 2 tbsp extra virgin olive oil
- Salt & Pepper
- Optional chilli flakes
Preheat your oven to 170°C fan/340°F
Start by adding your cherry tomatoes to a bowl. Coat with the 1 tbsp extra virgin olive oil, salt and pepper.
Unroll the puff pastry onto a baking tray. Score a border of around 2 cm, without slicing through the dough completely. Add a layer of passata into the rectangle, then add the cherry tomatoes (leaving the excess juice in the bowl).
Scatter the onion and goats cheese over the tart and season with salt, pepper and dried thyme. Add a drizzle of extra virgin olive oil (use your hands to coat the border) and pop in the oven for 25-30 minutes.
Garnish with rocket and dive in! Soooo good.
