Crispy Honey Balsamic Brussel Sprouts

- 500 g brussel sprouts (£0.70)
- 2 fresh chillies, finely chopped (£0.55)
- 2 cloves of garlic, minced (£0.39)
- Zest of half a lemon (£0.30)
Cupboard Essentials
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- Salt
- Pepper
Preheat oven to 200°C/ 405°F.
Slice of the root end of the Brussel sprouts, then slice them in half. Add to a baking tray with 2 tbsp olive oil and a generous pinch of salt and pepper. Toss to combine, then cover with foil and pop in the oven for 20 minutes.
During this time, in a bowl, combine the chopped fresh chillies, garlic, balsamic vinegar, honey and a pinch of salt and pepper.
After 20 minutes, remove the foil and pour on the glaze. Stir to combine and finish in the oven for 10-15 more minutes, or until golden and crispy.
Top with lemon zest and a crack of black pepper before serving.
