Crispy Honey Balsamic Brussel Sprouts

These honey balsamic brussel sprouts are roasted until crispy and tossed in a sticky glaze. The ultimate easy holiday side dish!

Ingredients

  • 500 g brussel sprouts (£0.70)
  • 2 fresh chillies, finely chopped (£0.55)
  • 2 cloves of garlic, minced (£0.39)
  • Zest of half a lemon (£0.30)

Cupboard Essentials

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • Salt
  • Pepper

Instructions

  • Preheat oven to 200°C/ 405°F.
  • Slice of the root end of the Brussel sprouts, then slice them in half. Add to a baking tray with 2 tbsp olive oil and a generous pinch of salt and pepper. Toss to combine, then cover with foil and pop in the oven for 20 minutes.
  • During this time, in a bowl, combine the chopped fresh chillies, garlic, balsamic vinegar, honey and a pinch of salt and pepper.
  • After 20 minutes, remove the foil and pour on the glaze. Stir to combine and finish in the oven for 10-15 more minutes, or until golden and crispy.
  • Top with lemon zest and a crack of black pepper before serving.

Notes

  • Trim the small stems and any wilted leaves before roasting.
  • Coat evenly with oil and spread them out to ensure maximum crispiness. 
  • No need to stir or flip the honey balsamic Brussels sprouts on the baking sheet; simply let them cook and caramelize.
  • Consider doubling the honey balsamic glaze to use with other roasted vegetables throughout the week.
