Ingredients

  • 500 g white fish cod, basa fillets, haddock, hake
  • 1-2 lemons sliced into rounds
  • fresh parsley

Cupboard Essentials

  • 3 tsp fish seasoning
  • 2 tbsp extra virgin olive oil
  • Black pepper

Instructions

  • Preheat your oven to 400°F/205°C conventional.
  • Pat the fish with paper towel to remove any excess moisture. Coat the fish on both sides with the fish seasoning.
  • To a large baking dish, add a layer of the lemon rounds to cover the base of the tray.
  • Place the fish on top of the lemons, coat with extra virgin olive oil, and bake for 15–25 minutes, or until the fish reaches 145°F (63°C), adjusting the time based on fillet thickness.
  • Remove from the oven and add an extra crack of black pepper and a sprinkle of fresh parsley. Enjoy!

Notes

  • My go-to fish seasoning is : 2 tsp Old Bay seasoning or all seasoning, 1/2 tsp ground cumin, 1 tsp black pepper, 1 tsp dried parsley, 1 tsp garlic granules , 1 tsp salt (or celery salt if you have).
  • Cook time will vary depending on the thickness of your fillet, so I like to check the fish at 15 minutes.
